Easy summer chicken salad. Marinading the chicken with Greek yogurt and some spices really elevates the chicken. Grilling it at a high heat lets you get that char flavour especially when you don't have a barbeque (hi, Yes that's me). Mix the chicken with whatever grain and veg you have to hand and a good dressing. Glorious summer salad of berries, lambs lettuce, toasted almonds and Greek feta. I love pairing sweet fruits with rich tangy feta and toasted almonds to add texture. Summer is still going strong and I am loving it! Warm chicken caesar pasta salad for dinner tonight. Making my super quick and easy mid week courgette pasta. A few simple ingredients and under 15 minutes and you have a light and scrumptious pasta perfect for summer. Celery, apple, coriander and hazelnut salad for the Weekday win. Fresh, crisp and zingy with its honey mustard dressing. Perfect for cleansing the body and soul before the weekend. Raspberry and white chocolate loaf in the making. Amazing what a few simple ingredients and just 40 minutes can produce. Just what the doctor orders on a wet miserable day! Gloriously simple prawn salad, packed full of goodness and flavour and served with some of my toasted brioche croutons. A great way to start the week. I adore fresh croutons and making them is just so simple. Simply using a few ingredients to make these croutons can elevate any salad. Lemon garlic chicken is one of my favourite meals to cook and eat. So crisp and juicy and the meat just falls apart. Thrown together in just 5 minutes and gently roasted in the oven for 40. Ideal to prep ahead of time, making it the perfect meal for busy families.
