Desperately trying to use up the last of the mini eggs floating around after Easter. We had a bowl on the counter and a bowl on the dining table. Time for mamma to stop eating them! Super salad for this sunny and warm Monday. Babygem topped with beetroot, vine tomatoes, cucumber, buffalo mozzarella and my spinach and cashew pesto (recipe on my blog). Berry scones and plain scones paired with our favourite @bonnemaman_irl jam for the Saturday breakfast win! What better way to celebrate the weekend with your nearest and dearest than will a lovely breakfast or brunch! A warming butternut and mushroom stroganoff salad. Roasted butternut squash, mushrooms and rice cooked in a brandy and cream sauce to create an absolutely mouth watering baked rice salad. Creamy chicken with crispy chorizo and cauliflower is on the cards for dinner tonight! A really light, fluffy and sweet strawberry and almond cake. This cake just makes me smile and I just popped the recipe link in my profile. I call this the 'clear out the fridge Sunday soup'. It reminds me of cauliflower cheese and is so simple, quick and tasty. So once again Emilie Pine has put her words to paper and written her incredible debut novel 'Ruth & Pen'. And I, once again am the incredibly proud and excited little sister. This week coming sees the launch of the Ruth & Pen with it hitting the shelves on Thursday the 5th of May.
