Howdy everyone! How are we all doing?
I will be the first to admit, that some days I find things hard and some I fly through. There is no rhyme or reason for either particular mood which makes it hard to get through the rougher days without feelings of guilt and over thinking, but all in all, things are going well. We are healthy and have lots to be thankful for, especially the extra time with my amazing child. I still don’t have a routine as per se, and while I am working and parenting, both my work and the parenting don’t live up to their usual standards ( I was going to use the word suffering but hey, in light of things in the world nothing in this house is suffering), that is just how it has to be. And I am ok with that or at least learning to live with it. I do not have a clean house, we do not have our Easter cards made nor any real semblance of art, mostly just a whole lot of paint all over the dining room and home schooling is non existant. We get out to the fresh air first thing in the morning while hunting for bad wolves on our bike ride around the block. We are lucky to have a garden and I steal as much time away from the computer that I can during the day. But my kid is watching a whole LOT of television. And that just has to be fine!
All in all, it’s going well here, a few emergency baths have been had due to the art corner being un supervised but we have ample food, lots of cuddles and movies (and popcorn) in bed every night and thanks to Amazon and the local post man, we have loads of new toys and cookbooks to keep ourselves feeling loved and pampered.
One thing that hasn’t suffered is our family meals. We eat breakfast, lunch and dinner together and it is good food too. Breakfast is our best meal though. Always lots of fresh fruit and a rotation of pancakes and sausage/bacon or yogurt and granola. We have had pancake Friday 3 weeks in a row now and I feel the kid is a little bored of it, so I have to up my pancake game. I decided to try pancake donuts and let Alex top them with whatever he likes. Some sprinkles here and there, chocolate chips and my personal favourite are chopped strawberries. Alex really loves to help in the kitchen and we usually bake every day in the afternoon ( I will definitely not be the same weight when our old lives starts resuming). This recipe is perfect for just the two of us; I made it a small batch for our small family, just double the ingredients if you are feeding more than 2. Cooking together is great fun and a really good way to get picky eaters to eat (not always, so don’t worry).
BAKED PANCAKE DONUTS
I use a banana in this recipe as the sweetener, so it is a healthier breakfast option, but if you don’t add toppings, the donuts will be a little boring so you can add 1 tsp of sugar to the mix if you are not using toppings.
- 120 g self raising flour
- 1 tsp baking powder
- 1 banana
- 1/2 cup yogurt (115 ml)
- 1/2 cup milk (115 ml)
- 1 egg
- 1/2 tsp vanilla
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cinnamon
for the toppings:
- a couple of strawberries, finely chopped
- some blueberries or berries of choice
- 1 tbsp chocolate chips
- some sprinkles
Heat the oven to 180C, place a baking tray in the oven while it heats (this is what you will place the donut mould onto). Spray a silicone donut mould with non stick baking spray or vegetable oil.
Seive the dry into a large bowl.
In a small bowl, mash the banana up. Then mix in the yogurt, milk, egg and vanilla. Mix for a minute so the egg is well beaten.
Pour the wet ingredients into the dry and mix well.
Pour the mix into the moulds and top with your toppings of choice. Don’t over fill the moulds or they will be more like flying saucers.
Pop into the oven for 15 minutes. They will fluff up and start to go slightly brown. They do not need to be too browned, otherwise they will be overcooked.
Take out of the oven and allow to cool before popping them out of the moulds.
